Gromperekichelcher

Fried fritters of grated potato with onion and parsley, a fixture at the capital’s markets and fairs, like the Schueberfouer.

  • Serves 4
  • 30 min

Ingredients

  • 1 kg potatoes
  • 1 onion
  • 2 eggs
  • 3 tablespoons of flour
  • Parsley
  • Salt and pepper
  • Oil for frying
  • Apple sauce (optional)

How to make it at home

  1. Grate the potatoes and onion and squeeze them dry in a cloth.
  2. Mix with the eggs, flour, parsley, salt and pepper.
  3. Drop spoonfuls of the mixture into hot oil and flatten them.
  4. Fry until golden and crisp on both sides.
  5. Drain and serve hot, with apple sauce if you like.

The trick: Squeezing the potato dry is what makes them crisp.

Where and what to eat

To eat like a local: a brasserie or a winstub. The dishes you can’t miss are in the Luxembourg guide.
