Menestra de verduras

The vegetable menestra of Tudela’s market gardens, with artichokes, asparagus, peas, broad beans and borage cooked separately and sautéed with ham.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 6 artichokes
  • 12 asparagus spears
  • 200 g peas
  • 200 g broad beans
  • 200 g borage or chard
  • 100 g ham
  • 2 garlic cloves, flour, oil and salt

How to make it at home

  1. Clean the vegetables and cook them separately in salted water, each for its own time; keep a little of the water.
  2. Fry the garlic and ham in oil and add a spoonful of flour.
  3. Pour in a glass of the cooking water and let it thicken.
  4. Add all the vegetables and let them cook together for 5 minutes.

The trick: In season, from March to May, it tastes like something else entirely.
