    Winter in Cappadocia

Bitter cold and snow; the balloons fly on fewer days because of the wind.

What to do: Snowy Cappadocia is beautiful: wrap up warm and leave spare days in case the balloon flight is cancelled.

  • February, March

    Ramadan (approximate dates)

During the day many restaurants close or open less and museum and shop hours change. The evenings, with iftar, are very special.

What to do: Out of respect, don’t eat or drink in the street during the day; book dinner for after sunset.

Testi kebabı

A meat and vegetable stew cooked in a sealed clay pot, which in Cappadocia is broken open at the table with a single blow. It’s said to have been born among the potters of Avanos.

  • Serves 4
  • 3 h

Ingredients

  • 800 g lamb or beef, diced
  • 2 onions
  • 2 tomatoes
  • 2 green peppers
  • 4 garlic cloves
  • 2 tablespoons of pepper or tomato paste
  • 50 g butter
  • Cumin, paprika and salt

How to make it at home

  1. Mix the meat with the chopped vegetables, garlic, pepper paste, spices and butter.
  2. Put everything in a clay pot (or a casserole with a tight-fitting lid) with half a glass of water.
  3. Cover and seal with a flour-and-water dough or foil.
  4. Bake at 180 °C for about 2½ hours.
  5. Break the seal at the table and serve with bulgur.

The trick: The pot goes into a cold oven so it doesn’t crack.
