    Ramadan (approximate dates)

During the day many restaurants close or open less and museum and shop hours change. The evenings, with iftar, are very special.

What to do: Out of respect, don’t eat or drink in the street during the day; book dinner for after sunset.

  • July, August

Heat on the coast and at the ruins

In July and August it’s very hot in Antalya, Pamukkale and Ephesus, and the coast fills up.

What to do: Visit the ruins first thing; to see them in peace, spring or autumn is better.

Çökertme kebabı

A kebab born in Bodrum: strips of beef stir-fried and served on crispy matchstick potatoes, with garlic yoghurt and a buttery tomato sauce.

  • Serves 4
  • 45 min

Ingredients

  • 500 g beef tenderloin or steak, in strips
  • 4 potatoes
  • 400 g Greek yoghurt
  • 2 garlic cloves
  • 2 tomatoes
  • 2 green peppers
  • 40 g butter
  • Oil, salt, pepper and paprika

How to make it at home

  1. Cut the potatoes into very thin matchsticks and fry them until crisp.
  2. Mix the yoghurt with crushed garlic and salt.
  3. Stir-fry the meat with the peppers over a high heat and season.
  4. Melt the butter with the grated tomato and paprika to make a sauce.
  5. Arrange the potatoes on the plate, the yoghurt around them, the meat in the centre and the sauce on top.

The trick: Assemble the plate just before serving so the potatoes don’t go soft.
