Karantika
A savoury bake of chickpea flour, cooked in the oven and served hot with cumin and harissa. It’s said to have been born in Oran in Spanish times: its name supposedly comes from calentita (“nice and hot”).
Ingredients
- 250 g chickpea flour
- 1 litre of water
- 100 ml oil
- 1 egg
- 1 teaspoon salt
- Cumin and harissa to serve
How to make it at home
- Whisk the chickpea flour with the water, oil and salt until there are no lumps, and leave it to rest for 30 minutes.
- Preheat the oven to 220 °C with a greased tray inside.
- Pour the mixture into the hot tray, about 2 centimetres deep.
- Brush the surface with beaten egg and bake for 30 minutes, until golden and set.
- Cut it into squares and serve hot with cumin and harissa.
The trick: In Oran it’s eaten inside a piece of bread, as a sandwich.
