Lavash

The thin Armenian bread that in Garni is baked stuck to the walls of the tonir, an oven set into the ground. Making it as a family is part of UNESCO’s Intangible Cultural Heritage.

  • Serves 8
  • 1 h

Ingredients

  • 500 g flour
  • 1 teaspoon salt
  • 1 teaspoon of dried yeast (optional)
  • 250 ml warm water
  • 1 tablespoon of oil
  • Sesame seeds (optional)

How to make it at home

  1. Knead the flour with the salt, yeast, water and oil until you have a smooth, elastic dough. Leave to rest for 30 minutes.
  2. Divide into 8 balls.
  3. Roll them out until very thin, almost see-through.
  4. Cook them in a large frying pan or on a very hot griddle without fat, 30–40 seconds per side.
  5. Stack them, covered with a cloth, so they stay pliable.

The trick: Dried, it keeps for months: revive it with a few drops of water.

Where and what to eat

To eat like a local: a tavern or a market. The dishes you can’t miss are in the Armenia guide.
