Fry jacks

Triangles of fried dough that puff up like balloons: breakfast on the cayes of Belize, with refried beans, eggs and cheese, or simply with honey.

  • Serves 4
  • 45 min

Ingredients

  • 300 g flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 30 g butter
  • About 180 ml water or milk
  • Oil for frying

How to make it at home

  1. Mix the flour with the baking powder and salt, and rub in the butter until it looks like sand.
  2. Add the water little by little and knead until you have a soft dough; leave it to rest for 15 minutes.
  3. Roll it out half a centimetre thick and cut it into triangles or squares.
  4. Fry them in oil at 180 °C, spooning oil over the top so they puff up.
  5. Serve them hot with refried beans and eggs, or with honey.

The trick: The oil needs to be very hot so they puff up in seconds.

Where and what to eat
