Nasi katok
Brunei’s favourite snack: white rice with a piece of fried chicken and spicy sambal, wrapped in paper. Its name comes from “knocking on the door”, because at first people bought it by knocking at night on the houses that sold it.
Ingredients
- 300 g jasmine rice
- 8 chicken thighs
- 1 teaspoon of turmeric
- 2 garlic cloves
- Cornflour and salt
- Sambal: 6 red chillies, 2 shallots, 1 garlic clove, 1 teaspoon of shrimp paste, sugar and salt
- Oil for frying
How to make it at home
- Cook the jasmine rice with twice its volume of water and a pinch of salt.
- Marinate the chicken with the turmeric, crushed garlic and salt for 30 minutes.
- Coat it in cornflour and fry in oil at 170 °C until golden and cooked through.
- For the sambal, blend the chillies, shallots, garlic and shrimp paste, and fry for 10 minutes with oil, sugar and salt.
- Serve a mound of rice with the chicken and a spoonful of sambal.
The trick: The sambal is what makes it: make it good and spicy and a little sweet.
