Pouding chômeur

The “unemployed man’s pudding”, born in Quebec during the Great Depression: a simple sponge baked over a maple syrup that stays at the bottom like a sauce.

  • Serves 8
  • 1 h

Ingredients

  • 300 ml maple syrup
  • 200 ml cream
  • 100 ml water
  • 200 g flour
  • 2 teaspoons of baking powder
  • 100 g sugar
  • 80 g butter
  • 1 egg
  • 150 ml milk
  • 1 teaspoon of vanilla

How to make it at home

  1. Heat the maple syrup with the cream and water until it boils, and pour it into an ovenproof dish.
  2. Beat the butter with the sugar and egg; add the vanilla, the flour with the baking powder and the milk.
  3. Drop spoonfuls of batter over the hot syrup, without mixing.
  4. Bake at 180 °C for about 35 minutes, until the sponge is golden.
  5. Serve it warm with the syrup from the bottom.

The trick: The batter floats and the syrup thickens underneath: don’t stir.

Where and what to eat
