Sheftalia

Cypriot sausages of minced meat with onion and parsley wrapped in caul fat and grilled over coals. They’re eaten in pitta with salad in Limassol’s tavernas.

  • Serves 4
  • 50 min

Ingredients

  • 500 g minced pork (or half lamb)
  • 1 onion, finely chopped
  • 1 bunch of parsley
  • 1 teaspoon of cinnamon
  • Salt and pepper
  • Caul fat, from the butcher
  • Pitta bread, tomato, cucumber and lemon

How to make it at home

  1. Mix the meat with the onion, parsley, cinnamon, salt and pepper.
  2. Soak the caul fat in warm water with vinegar and spread it out.
  3. Lay long portions of meat on it and wrap them in the caul.
  4. Thread onto skewers and grill over medium coals for about 15 minutes, until the caul turns golden.
  5. Serve in pitta with salad and lemon.

The trick: The caul melts away and keeps them juicy.

Where and what to eat

To eat like a local: a taverna serving meze. The dishes you can’t miss are in the Cyprus guide.
