Mangú with los tres golpes

The Dominican breakfast: mashed green plantain with pickled onion, served with “los tres golpes” (the three hits): fried salami, fried cheese and a fried egg.

  • Serves 4
  • 35 min

Ingredients

  • 4 green plantains
  • 50 g butter
  • 2 red onions
  • 4 tablespoons of vinegar
  • 8 thick slices of Dominican salami (or another sausage for frying)
  • 8 thick slices of frying cheese
  • 4 eggs
  • Oil and salt

How to make it at home

  1. Cut the onion into rings and sauté it briefly in oil with the vinegar and salt.
  2. Peel the plantains and boil them in salted water for about 20 minutes.
  3. Drain them (keeping a little of the water) and mash them with the butter and water until smooth.
  4. Fry the salami, the cheese and the eggs.
  5. Serve the mangú with the onion on top and the three hits on the side.

The trick: Mash the plantains while hot with their cooking water: it comes out creamier.
