Kelewele

Cubes of ripe plantain marinated in ginger, chilli and spices and fried: Accra’s night-time snack, with roasted peanuts.

  • Serves 4
  • 30 min

Ingredients

  • 4 very ripe plantains
  • 1 piece of ginger
  • 1 chilli
  • 1/2 onion
  • 1 teaspoon of ground cloves and aniseed (optional)
  • Salt
  • Oil for frying
  • Roasted peanuts

How to make it at home

  1. Peel the plantains and cut them into cubes.
  2. Blend the ginger, chilli and onion with the spices and salt.
  3. Mix the plantain with the paste and leave to marinate for 20 minutes.
  4. Fry them in hot oil until caramelised.
  5. Drain them and serve with roasted peanuts.

The trick: The riper the plantains (almost black), the sweeter they are.

Where and what to eat

To eat like a local: a chop bar (a local eatery). The dishes you can’t miss are in the Ghana guide.
