Dakos

Crete’s salad: a toasted barley rusk, dipped in water and oil and topped with grated tomato, mizithra cheese, olives and oregano.

  • Serves 4
  • 15 min

Ingredients

  • 4 barley rusks (paximadia) or slices of very well toasted wholemeal bread
  • 3 ripe tomatoes
  • 150 g mizithra or feta cheese
  • 12 black olives
  • 1 tablespoon of capers
  • Dried oregano
  • Extra virgin olive oil and salt

How to make it at home

  1. Dip the rusks briefly in water so they soften slightly without falling apart.
  2. Put them on a plate and drizzle with oil.
  3. Grate the tomatoes, salt them and spread them on top with their juice.
  4. Crumble the cheese over the top and add the olives, capers and oregano.
  5. Finish with more oil and leave to rest for 10 minutes so the rusk soaks it up.

The trick: In Crete they don’t skimp on olive oil: it’s the foundation of their cooking.
