Halászlé

The fisherman’s soup, red with paprika, made with carp and other river fish. Szeged’s version, on the banks of the Tisza, is strained until smooth and is the most famous in the country.

  • Serves 6
  • 1 h 30 min

Ingredients

  • 1.5 kg river fish (carp, catfish) or white fish, with heads and bones
  • 3 onions
  • 1 pepper and 1 tomato
  • 3 tablespoons of Hungarian sweet paprika
  • 1 chilli
  • Salt

How to make it at home

  1. Put the heads, bones and the less choice pieces in a pot with the onion, pepper and tomato, cover with water and simmer for 1 hour.
  2. Pass everything through a food mill and strain the broth.
  3. Bring it back to the boil, add the paprika and chilli and season with salt.
  4. Cook the fish fillets in it for 10 minutes over a high heat.
  5. Serve with bread and fresh chilli.

The trick: In Szeged it’s cooked outdoors in cauldrons at the Fish Soup Festival.

Where and what to eat

To eat like a local: the étkezde (a canteen-style eatery). The dishes you can’t miss are in the Hungary guide.
