Mirchi vada

Large chillies stuffed with spiced potato, coated in chickpea batter and fried. It’s Jodhpur’s afternoon street snack, with mint chutney and a chai.

  • Serves 4
  • 45 min

Ingredients

  • 8 large, mild green chillies (or small Italian peppers)
  • 3 boiled potatoes
  • 1 teaspoon of cumin, 1 of ground coriander and 1/2 of garam masala
  • 1 teaspoon of amchur (dried mango) or lemon juice
  • Fresh coriander
  • 150 g chickpea flour
  • 1/2 teaspoon of turmeric and a pinch of bicarbonate of soda
  • Oil for frying, and salt

How to make it at home

  1. Slit the chillies lengthways and remove the seeds.
  2. Mash the potatoes with the spices, amchur, coriander and salt, and stuff the chillies.
  3. Make a thick batter with the chickpea flour, turmeric, bicarbonate, salt and water.
  4. Coat the chillies and fry them in oil at 175 °C until golden.
  5. Serve hot with mint or tamarind chutney.

The trick: In Jodhpur they fry them twice, cut in half, to make them crispier.
