Sate lilit

Bali’s skewers: a fish or chicken paste with coconut and spices wrapped around lemongrass stalks and chargrilled. They’re cooked for temple ceremonies.

  • Serves 4
  • 50 min

Ingredients

  • 500 g minced white fish or chicken
  • 100 g grated coconut
  • 2 tablespoons of coconut milk
  • Base genep: 4 shallots, 3 garlic cloves, 2 chillies, 1 piece of ginger, turmeric and galangal, 1 teaspoon of ground coriander
  • 2 kaffir lime leaves
  • 1 teaspoon of palm sugar
  • Lemongrass stalks (or skewers)
  • Salt

How to make it at home

  1. Pound or blend the base ingredients into a paste and fry it for 3 minutes.
  2. Mix it with the fish, coconut, coconut milk, chopped kaffir lime leaves, sugar and salt.
  3. Take a portion and press it around a lemongrass stalk in a long shape.
  4. Grill them over coals or on a griddle, turning them, for about 8 minutes.
  5. Serve them with rice and sambal.

The trick: The lemongrass stalks perfume the meat from the inside.
