Manty

Large steamed dumplings filled with lamb, onion and pumpkin, cooked in a tiered steamer. In Bishkek they’re eaten with soured cream or chilli sauce.

  • Serves 4
  • 1 h 30 min

Ingredients

  • 400 g flour
  • 200 ml water and a pinch of salt
  • 500 g lamb, finely chopped by hand
  • 3 onions, chopped
  • 200 g pumpkin, finely diced (optional)
  • Cumin, salt and pepper
  • Butter
  • Soured cream or yoghurt to serve

How to make it at home

  1. Knead the flour with the water and salt to a firm dough and leave it to rest for 30 minutes.
  2. Mix the lamb with the onion, pumpkin, cumin, salt and pepper.
  3. Roll the dough out thinly and cut it into 10 cm squares.
  4. Put filling in the centre, bring the four corners together and pinch the edges to seal.
  5. Grease the bottoms with butter and steam them for 40 minutes.

The trick: If you don’t have a tiered steamer, a large bamboo steamer works.

Where and what to eat

To eat like a local: a yurt or a teahouse. The dishes you can’t miss are in the Kyrgyzstan guide.
