Šaltibarščiai

The bright pink cold beetroot and kefir soup eaten in Vilnius in summer, with hot boiled potatoes on the side. It even has its own festival.

  • Serves 4
  • 20 min

Ingredients

  • 3 cooked beetroots
  • 1 litre of kefir
  • 2 cucumbers
  • 2 hard-boiled eggs
  • Dill and spring onion
  • Salt
  • Hot boiled potatoes

How to make it at home

  1. Grate the beetroot and cut the cucumber into thin strips.
  2. Chop the dill and spring onion.
  3. Mix everything with the cold kefir and salt.
  4. Chill in the fridge.
  5. Serve with half a hard-boiled egg and hot potatoes on the side.

The trick: The contrast between the cold soup and the hot potato is the whole point.

Where and what to eat
