Torta ahogada

Guadalajara’s sandwich: birote bread filled with carnitas, “drowned” in tomato sauce and doused in hot chile de árbol salsa. It’s eaten with your hands and plenty of napkins.

  • Serves 4
  • 45 min

Ingredients

  • 4 crusty rolls (birote or short baguettes)
  • 600 g pork carnitas (or shredded roast pork)
  • 200 g refried beans
  • 6 tomatoes
  • 1/4 onion and 2 garlic cloves
  • 15 dried chiles de árbol
  • Vinegar, oregano, cumin and salt
  • Red onion rings and lime

How to make it at home

  1. For the mild sauce, cook the tomatoes with the onion and garlic, blend with salt and oregano and strain.
  2. For the hot sauce, toast the chiles de árbol and blend them with vinegar, garlic, cumin, salt and a little water.
  3. Split the rolls, spread them with beans and fill them with carnitas.
  4. Put each torta in a deep plate and pour over the hot tomato sauce.
  5. Add hot sauce to taste and serve with red onion and lime.

The trick: The bread must have a hard crust so it survives the soaking without falling apart.

Where and what to eat

To eat like a local: the fonda (family-run eatery). The dishes you can’t miss are in the Mexico guide.
