Tsuivan

Home-made noodles stir-fried and finished in steam with meat and vegetables, an everyday dish in Mongolia, simple and hearty for the cold of the steppe.

  • Serves 4
  • 1 h

Ingredients

  • 300 g flour and 150 ml water (or 400 g thick noodles)
  • 400 g beef or lamb, cut into strips
  • 1 onion
  • 2 carrots
  • 1/4 cabbage
  • 1 pepper
  • Oil, salt and pepper

How to make it at home

  1. Make a dough with the flour and water, roll it out thinly, brush it with oil, roll it up and cut it into strips like tagliatelle.
  2. Brown the meat in oil in a deep frying pan.
  3. Add the vegetables, cut into strips, and stir-fry for 5 minutes with salt and pepper.
  4. Lay the noodles on top, add half a glass of water and cover for 10 minutes over a low heat so they steam.
  5. Mix everything well before serving.

The trick: If you’re using shop-bought noodles, cook them only halfway before putting them on top.

Where and what to eat

To eat like a local: a ger or a Mongolian restaurant. The dishes you can’t miss are in the Mongolia guide.
