Amlou

The spread of the Agadir and Souss region: roasted almonds ground with argan oil and honey, spread on bread or msemen for breakfast.

  • Serves 8
  • 30 min

Ingredients

  • 250 g raw skin-on almonds
  • 120 ml argan oil (or a mild olive oil with a few drops of walnut oil)
  • 4 tablespoons of honey
  • A pinch of salt

How to make it at home

  1. Roast the almonds in the oven at 180 °C for about 10 minutes, until fragrant.
  2. Blitz them in a food processor until they release their oil and form a paste.
  3. Add the honey and salt, then the oil little by little, still blending.
  4. Keep it in a glass jar and serve with bread or flatbreads.

The trick: Use culinary (roasted) argan oil, not the cosmetic kind.

Where and what to eat
