Heat and rain in the north

It’s high summer: fierce heat in the desert and storms in the north; in Etosha the animals spread out.

What to do: The best time for safari is May to October, when water is scarce and wildlife gathers at the waterholes.

Kapana

Grilled strips of beef sold at the Katutura markets in Windhoek and dipped in chilli salt. It’s eaten standing up, with your hands, beside the fire.

  • Serves 4
  • 30 min

Ingredients

  • 800 g beef (flank or sirloin), in thin strips
  • Coarse salt
  • For the chilli salt: 2 tablespoons of salt, 1 of chilli powder, 1 of paprika, 1 teaspoon of garlic powder
  • For the salsa: chopped tomato, onion and chilli
  • White bread rolls

How to make it at home

  1. Mix the salt with the chilli, paprika and garlic.
  2. Make a fresh salsa of tomato, onion and chilli.
  3. Grill the strips of meat on a very hot grill or griddle for 2–3 minutes.
  4. Cut them into small pieces on the board.
  5. Dip each piece in the chilli salt and eat it with the salsa and bread.

The trick: The meat is salted afterwards, at the moment you eat it.

Where and what to eat

To eat like a local: a braai (barbecue) or a local restaurant. The dishes you can’t miss are in the Namibia guide.
