Vigorón

Born in Granada in the early 20th century: boiled cassava with crispy pork crackling and a cabbage salad with tomato and vinegar, served on a banana leaf.

  • Serves 4
  • 45 min

Ingredients

  • 1 kg cassava
  • 300 g pork crackling (chicharrón)
  • 1/2 cabbage
  • 2 tomatoes
  • 1 onion
  • Vinegar, salt and chilli to taste
  • Banana leaves (optional)

How to make it at home

  1. Peel the cassava, remove the fibrous core and boil it in salted water for 25 minutes, until tender.
  2. Shred the cabbage very finely and mix it with the chopped tomato and onion.
  3. Dress the salad with vinegar, salt and chilli and leave it to stand for 15 minutes.
  4. Cut the crackling into pieces.
  5. Serve the cassava on a banana leaf with the crackling and salad on top.

The trick: The salad needs to be nice and sharp to contrast with the crackling.

Where and what to eat

To eat like a local: a fritanga (street grill) or a comedor. The dishes you can’t miss are in the Nicaragua guide.
