Quesillo

A warm maize tortilla wrapped around a slice of fresh cheese, with onion pickled in vinegar and cream. The most famous are sold in Nagarote and La Paz Centro, on the road to León.

  • Serves 4
  • 40 min

Ingredients

  • 8 maize tortillas
  • 400 g fresh cheese that melts a little (such as mozzarella)
  • 1 white onion
  • 200 ml vinegar
  • 200 ml thick soured cream
  • Salt

How to make it at home

  1. Slice the onion into thin rings and leave it in the vinegar with salt for at least 30 minutes.
  2. Cut the cheese into thick slices.
  3. Warm the tortillas in a frying pan and put a slice of cheese on each one so it softens.
  4. Roll or fold them and put them on a plate.
  5. Top them with the cream and the pickled onion with a little of its vinegar.

The trick: In Nicaragua they’re eaten from a small plastic bag, biting through one corner.

Where and what to eat

To eat like a local: a fritanga (street grill) or a comedor. The dishes you can’t miss are in the Nicaragua guide.
