Quinoa soup

The soup of the altiplano on the shores of Titicaca: quinoa, potato, vegetables and a little meat, with Andean herbs. It warms the cold nights in Puno, almost 4,000 metres up.

  • Serves 4
  • 50 min

Ingredients

  • 150 g well-rinsed quinoa
  • 300 g beef or lamb, diced (optional)
  • 2 potatoes
  • 1 carrot
  • 1 onion and 2 garlic cloves
  • 100 g broad beans or peas
  • 1.5 l stock or water
  • 1 tablespoon of ají amarillo (optional)
  • Oregano, mint, cumin and salt
  • 100 g fresh cheese

How to make it at home

  1. Fry the onion and garlic with the chilli and cumin, and brown the meat.
  2. Add the stock and simmer for 20 minutes.
  3. Add the quinoa and the diced potato and carrot, and simmer for 15 minutes.
  4. Add the broad beans and cook for 5 minutes more.
  5. Serve with diced fresh cheese, oregano and mint.

The trick: Rinse the quinoa very well to remove the saponin, which is bitter.
