Koko Samoa

Samoan chocolate, made from cocoa beans roasted and ground on the island: an intense drink taken hot with sugar in the cafés and markets of Apia.

  • Serves 4
  • 15 min

Ingredients

  • 100 g pure cocoa paste (or 100 % chocolate)
  • 1 litre of water
  • Sugar to taste
  • Optional: coconut milk

How to make it at home

  1. Grate or chop the cocoa paste.
  2. Heat the water and add the cocoa little by little, stirring until it dissolves.
  3. Let it simmer gently for 5 minutes and sweeten to taste.
  4. Serve it hot, with a splash of coconut milk if you like.

The trick: In Samoa it isn’t strained: the grounds at the bottom are part of the charm.

Where and what to eat

To eat like a local: a market or a beach fale. The dishes you can’t miss are in the Samoa guide.
