Chilli crab

Crab in a thick, sweet and spicy tomato and chilli sauce, bound with egg. It’s eaten with your hands at the seafood restaurants by the bay and mopped up with mantou, fried buns.

  • Serves 4
  • 45 min

Ingredients

  • 2 large mud crabs (or 1.5 kg brown crab)
  • 4 garlic cloves, 1 piece of ginger and 4 shallots
  • 4 red chillies
  • 4 tablespoons of ketchup and 2 of sweet chilli sauce
  • 1 tablespoon of sugar and 1 of soy sauce
  • 1 tablespoon of cornflour
  • 1 beaten egg
  • Coriander
  • Chinese buns (mantou) for dipping

How to make it at home

  1. Clean and joint the crabs and crack the claws.
  2. Blend the garlic, ginger, shallots and chillies, and fry the paste in a wok.
  3. Add the crabs, stir-fry and add a glass of water; cover and cook for 8 minutes.
  4. Stir in the ketchup, chilli sauce, sugar and soy sauce, and thicken with cornflour.
  5. Off the heat, drizzle in the beaten egg, stir so it forms ribbons and finish with coriander.

The trick: The fried buns are for dipping in the sauce: it’s the best part.

Where and what to eat
