Atascaburras

A La Mancha purée of potato and salt cod pounded with garlic and oil, topped with hard-boiled egg and walnuts, eaten in winter in Albacete.

  • Serves 4
  • 50 min

Ingredients

  • 500 g potatoes
  • 250 g desalted salt cod
  • 3 garlic cloves
  • 200 ml olive oil
  • 2 hard-boiled eggs
  • Shelled walnuts

How to make it at home

  1. Boil the potatoes in salted water and add the cod for the last 5 minutes.
  2. Pound the garlic in a mortar, add the flaked cod and crush it.
  3. Add the potatoes and gradually pour in the oil, pounding until you have a smooth purée.
  4. Serve warm, topped with hard-boiled egg and walnuts.

The trick: It’s made in a mortar, with patience: in a blender it turns gluey.
