Costrada de Alcalá

Alcalá de Henares’s cake: layers of puff pastry with pastry cream and meringue, topped with flaked almonds and icing sugar.

  • Serves 8
  • 1 h 30 min

Ingredients

  • 2 sheets of puff pastry
  • 500 ml milk
  • 4 yolks and 2 whites
  • 120 g sugar and 40 g cornflour
  • 100 g sugar for the meringue
  • Flaked almonds and icing sugar

How to make it at home

  1. Prick and weigh down the puff pastry sheets and bake them at 200 °C until golden.
  2. Make a pastry cream with the milk, yolks, sugar and cornflour, and leave to cool.
  3. Whisk the egg whites with the sugar to a firm meringue.
  4. Assemble the cake: pastry, cream, meringue and pastry.
  5. Top with toasted almonds and icing sugar.

The trick: Assemble the costrada just before serving so the pastry stays crisp.
