Yemas de Santa Teresa

Egg-yolk and syrup sweets sold in Ávila’s pastry shops, in honour of St Teresa, who was born in the city.

  • Serves 8
  • 1 h

Ingredients

  • 12 egg yolks
  • 200 g sugar
  • 100 ml water
  • 1 strip of lemon peel
  • 1 cinnamon stick
  • Icing sugar for coating

How to make it at home

  1. Make a syrup with the water, sugar, lemon peel and cinnamon, boiling it until it reaches the thin-thread stage.
  2. Remove the peel and cinnamon and let the syrup cool slightly.
  3. Add the yolks through a strainer and cook over a low heat, stirring constantly, until the mixture comes away from the pan.
  4. Leave the paste to cool, shape it into small balls and roll them in icing sugar.
  5. Serve them in paper cases.

The trick: Keep the heat very low: if it gets too hot, the yolk sets in lumps.
