Arroz a la zamorana

A brothy winter rice with pork from the matanza (ear, trotters, ribs and chorizo), Zamora’s festive dish, especially at Carnival.

  • Serves 6
  • 2 h 30 min

Ingredients

  • 400 g rice
  • 1 pig’s ear and 2 pig’s trotters, cooked
  • 300 g pork ribs
  • 1 chorizo
  • 1 onion, 2 garlic cloves and 1 turnip
  • Paprika, oil and salt

How to make it at home

  1. Cook the ear, trotters and ribs with the onion and turnip for 1½ hours, and keep the stock.
  2. Chop the meat and the chorizo.
  3. In an earthenware dish, fry the garlic, add the paprika and the meat, and then the rice.
  4. Pour in twice as much stock as rice and cook for 18 minutes.
  5. Finish for 5 minutes in a hot oven so it browns on top.

The trick: It should be creamy, with some liquid left: it’s not a paella.
