Cocido lebaniego

Liébana’s stew, with small chickpeas from Potes, cabbage, morcilla, chorizo and relleno (egg and breadcrumb dumplings), served in courses and finished with orujo.

  • Serves 6
  • 3 h

Ingredients

  • 500 g small chickpeas
  • 1 piece of pork fat, 1 chorizo and 1 morcilla
  • 200 g beef shin and 1 bone
  • 1/2 cabbage
  • 3 potatoes
  • Relleno: 2 eggs, breadcrumbs, garlic, parsley and a little chopped chorizo

How to make it at home

  1. Soak the chickpeas the night before and simmer them gently with the meats and the bone for two hours.
  2. Cook the cabbage separately with the potatoes and fry them with garlic.
  3. Mix the relleno ingredients, fry them as small patties and add them to the stew for the last 15 minutes.
  4. Serve the soup first, then the chickpeas with the cabbage and finally the meats.

The trick: In Liébana it’s finished with a shot of orujo (pomace brandy) from Potes.
