    Southwest monsoon

From May to September it rains on the south and west coasts and the sea is too rough for swimming or whale watching.

What to do: At that time of year, the east coast (Trincomalee, Arugam Bay) is at its best.

Kottu roti

Roti bread chopped on the griddle with vegetables, egg, meat and curry, to the rhythmic clatter of two metal spatulas you can hear all down the street. The sound of Colombo’s nights.

  • Serves 2
  • 30 min

Ingredients

  • 4 roti breads or parathas (or wheat tortillas)
  • 200 g curried chicken in strips (with its sauce)
  • 2 eggs
  • 1 onion, 1 carrot and 1/4 cabbage, cut into strips
  • 2 spring onions and 1 green chilli
  • 2 garlic cloves
  • Oil and salt

How to make it at home

  1. Cut the breads into thin strips.
  2. On a very hot griddle or wok with oil, stir-fry the onion, garlic, chilli, carrot and cabbage.
  3. Make a well and scramble the eggs.
  4. Add the bread and chicken with a little curry sauce, and chop everything with the edges of two spatulas as you mix.
  5. Finish with spring onion and serve with more curry sauce.

The trick: The curry sauce is what gives it flavour: keep some aside.

Where and what to eat
