    Ramadan (approximate dates)

During the day many restaurants close or open less and museum and shop hours change. The evenings, with iftar, are very special.

What to do: Out of respect, don’t eat or drink in the street during the day; book dinner for after sunset.

  • July, August

    Intense heat

In July and August it’s very hot, especially inland; the coast is more bearable.

What to do: For ruins and medinas, spring and autumn are best; in summer, the beach.

Lablabi

Chickpea soup with cumin, garlic and harissa poured over stale bread, with an egg and tuna. It’s the winter breakfast of workers in the capital.

  • Serves 4
  • 30 min

Ingredients

  • 500 g cooked chickpeas with their liquid
  • 4 garlic cloves
  • 1 teaspoon of cumin
  • 1 tablespoon of harissa
  • Day-old bread in pieces
  • 4 eggs (poached or raw)
  • Tuna, capers, olive oil and lemon

How to make it at home

  1. Heat the chickpeas with their liquid, crushed garlic and cumin.
  2. Put pieces of bread in the bottom of the bowls.
  3. Pour the boiling chickpeas and broth over the top.
  4. Add an egg (it sets in the heat), tuna, capers and harissa.
  5. Finish with oil, cumin and lemon, and mix at the table.

The trick: Everyone seasons their own: don’t be shy with the harissa.

Where and what to eat

To eat like a local: a medina restaurant or a brik stall. The dishes you can’t miss are in the Tunisia guide.
