Johnnycakes

Rolls of fried dough, crisp outside and fluffy inside, eaten at any time of day on St Croix, plain or filled with saltfish.

  • Serves 6
  • 45 min

Ingredients

  • 500 g flour
  • 2 teaspoons of baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 60 g cold butter
  • About 250 ml water or milk
  • Oil for frying

How to make it at home

  1. Mix the flour with the baking powder, sugar and salt.
  2. Add the butter in small pieces and rub it in with your fingers until it looks like sand.
  3. Add the water little by little until you have a soft dough and leave it to rest for 15 minutes.
  4. Shape into balls, flatten them into discs a centimetre thick and prick them with a fork.
  5. Fry them in oil at 170 °C until golden on both sides.

The trick: Split them in half and fill them with stewed saltfish or cheese.
