    Torrential rain and typhoons

From September to December it rains heavily in the centre; in October and November there are floods (Hoi An floods almost every year) and typhoons.

Mì Quảng

The noodles of Quảng Nam province, around Da Nang: wide turmeric rice noodles with a little broth, prawns, pork, peanuts and a crispy rice cracker.

  • Serves 4
  • 50 min

Ingredients

  • 400 g wide rice noodles
  • 300 g sliced pork belly
  • 300 g prawns
  • 2 shallots and 3 garlic cloves
  • 1 teaspoon of turmeric
  • 3 tablespoons of fish sauce
  • 500 ml chicken stock
  • Roasted peanuts, sesame rice crackers, herbs and lime

How to make it at home

  1. Fry the shallots and garlic with the turmeric, add the pork and brown it.
  2. Add the prawns, fish sauce and stock and simmer for 10 minutes: there should be only a little broth.
  3. Cook the noodles and drain them.
  4. Put the noodles in bowls with herbs and lettuce underneath, then the pork, prawns and a little broth on top.
  5. Finish with peanuts and the rice cracker broken over the top.

The trick: It’s almost a warm salad: just enough broth to moisten the noodles.

Where and what to eat

To eat like a local: the phở stall. The dishes you can’t miss are in the Vietnam guide.
