Fërgesë

Peppers, tomato and curd cheese cooked in a clay pot until creamy. The Tirana version, the best known, is served hot with bread.

  • Serves 4
  • 45 min

Ingredients

  • 4 red and green peppers
  • 3 ripe tomatoes
  • 1 onion
  • 2 garlic cloves
  • 250 g curd cheese or fresh cheese
  • 100 g feta cheese
  • 50 g butter
  • Paprika, salt and pepper

How to make it at home

  1. Roast the peppers, peel them and cut them into strips.
  2. Fry the onion and garlic in butter, add the peeled tomato and cook for 10 minutes.
  3. Add the peppers and paprika.
  4. Add the crumbled curd cheese and feta and stir until they melt.
  5. Transfer to a clay pot and grill for 10 minutes.

The trick: There are also versions with liver or meat: Tirana’s is the pepper one.
