Córdoba alfajores

In Córdoba, alfajores are filled with quince paste or dulce de leche and covered in a crisp white glaze. They’re the classic gift to bring back from the hills.

  • Serves 12
  • 1 h

Ingredients

  • 250 g flour
  • 1 teaspoon of baking powder
  • 80 g butter
  • 80 g sugar
  • 1 egg and 1 yolk
  • Quince paste or dulce de leche
  • For the glaze: 1 egg white and 200 g icing sugar with a few drops of lemon

How to make it at home

  1. Beat the butter with the sugar, add the egg and yolk and then the flour with the baking powder.
  2. Roll out the dough and cut out rounds of about 6 cm.
  3. Bake at 180 °C for about 12 minutes and leave to cool.
  4. Sandwich the biscuits in pairs with softened quince paste or dulce de leche.
  5. Whisk the egg white with the icing sugar and lemon, coat the alfajores and leave the glaze to set.

The trick: The glaze should be white and crisp, like a thin shell.

Where and what to eat

To eat like a local: the parrilla (grill house). The dishes you can’t miss are in the Argentina guide.
