Pie floater

Adelaide’s late-night dish: a meat pie floating upside down in a thick pea soup, with ketchup. It was sold from night carts from the 19th century onwards.

  • Serves 4
  • 1 h 30 min

Ingredients

  • 4 meat pies
  • 300 g split peas (green or yellow)
  • 1 onion
  • 1 ham bone or 100 g pancetta
  • 1 litre of stock
  • Ketchup, mint and malt vinegar

How to make it at home

  1. Cook the peas with the onion, the ham bone and the stock for 1 hour, until they break down.
  2. Blend the soup: it should be thick.
  3. Heat the pies in the oven.
  4. Put a ladle of soup in each bowl and a pie upside down on top.
  5. Finish with a good squirt of ketchup and, if you like, vinegar and mint.

The trick: The pie goes upside down: that way it floats and the soup doesn’t soften the lid.
