Banitsa

Filo pastry filled with egg, yoghurt and sirene cheese, Sofia’s breakfast with a glass of boza or drinking yoghurt.

  • Serves 6
  • 1 h

Ingredients

  • 400 g filo pastry
  • 4 eggs
  • 250 g yoghurt
  • 250 g sirene or feta cheese
  • 1/2 teaspoon of bicarbonate of soda
  • 100 g melted butter

How to make it at home

  1. Beat the eggs with the yoghurt and bicarbonate of soda, and add the crumbled cheese.
  2. Butter a baking dish.
  3. Scrunch the filo sheets two at a time, dipping them in the mixture, and arrange them in the dish (or make alternating layers of sheets and filling).
  4. Pour the rest of the filling and the butter over the top.
  5. Bake at 200 °C for about 35 minutes, until golden.

The trick: At New Year, little paper wishes are hidden inside it.

Where and what to eat

To eat like a local: a mehana (traditional tavern). The dishes you can’t miss are in the Bulgaria guide.
