Poulet DG

“Managing director’s chicken”, born in Douala’s restaurants for special occasions: browned chicken stewed with vegetables and fried plantain.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 1 chicken, jointed
  • 3 ripe plantains
  • 2 carrots
  • 150 g green beans
  • 1 green pepper
  • 1 onion
  • 2 tomatoes
  • 2 garlic cloves and 1 piece of ginger
  • Parsley, salt and oil

How to make it at home

  1. Marinate the chicken with the garlic, grated ginger and salt, and brown it all over in oil.
  2. Cut the plantain into thick slices, fry until golden and set aside.
  3. In the same pot, fry the onion, add the chopped tomato and then the carrots, beans and pepper in pieces.
  4. Add the chicken with a glass of water and cook covered for 25 minutes.
  5. Add the fried plantain and the parsley, mix gently and leave for 5 more minutes.

The trick: The plantain should be very ripe, with almost black skin: that way it caramelises.

Where and what to eat

To eat like a local: a maquis or a grilled-fish stall. The dishes you can’t miss are in the Cameroon guide.
