Chargrilled fish

The fish grilled at the beach stalls in Kribi: whole, opened out and rubbed with a paste of spices, ginger and garlic, served with onion, chilli and cassava sticks.

  • Serves 4
  • 50 min

Ingredients

  • 2 whole fish (sea bream, sea bass or large mackerel), cleaned
  • 1 onion
  • 4 garlic cloves
  • 1 piece of ginger
  • 1 bunch of parsley
  • 1 stock cube
  • 1 chilli
  • Oil and salt

How to make it at home

  1. Score a few cuts in the sides of the fish.
  2. Blend the onion, garlic, ginger, parsley, stock cube, chilli and a little oil into a paste.
  3. Rub the fish inside and out with the paste and leave for 20 minutes.
  4. Grill it over embers or under a hot oven grill, about 10 minutes on each side.
  5. Serve with raw onion rings, hot sauce and plantain or cassava.

The trick: Oil the grill well so the skin doesn’t stick when you turn the fish.

Where and what to eat
