    Cold and short days

In winter it’s cold in almost the whole country and it gets dark early; it’s milder on the Mediterranean coast.

What to do: It’s the season of the Christmas markets in Alsace, and Paris has fewer people: wrap up and make the most of the morning light.

  • July, August

    High season

In July and August the Riviera, Provence and Mont-Saint-Michel fill up, and in August many neighbourhood businesses close for the holidays.

What to do: Book well ahead, start early at the famous sights or go in June or September.

Ratatouille

Nice’s vegetable stew: aubergine, courgette, pepper, tomato and onion, with herbes de Provence and olive oil. In Nice each vegetable is cooked separately.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 1 aubergine
  • 2 courgettes
  • 1 red and 1 green pepper
  • 2 onions
  • 4 ripe tomatoes
  • 3 garlic cloves
  • Thyme, bay leaf and basil
  • Olive oil, salt and pepper

How to make it at home

  1. Cut all the vegetables into cubes of about 2 cm.
  2. Sauté the aubergine, courgette and peppers separately in oil until golden. Set them aside.
  3. In a pot, soften the onion with the garlic, add the tomato and herbs and let it cook into a sauce.
  4. Add all the vegetables, season and simmer covered over a low heat for about 30 minutes.
  5. Finish with fresh basil and a drizzle of raw olive oil.

The trick: Better the next day, and it’s also eaten cold.
