    Cold and short days

In winter it’s cold in almost the whole country and it gets dark early; it’s milder on the Mediterranean coast.

What to do: It’s the season of the Christmas markets in Alsace, and Paris has fewer people: wrap up and make the most of the morning light.

  • July, August

    High season

In July and August the Riviera, Provence and Mont-Saint-Michel fill up, and in August many neighbourhood businesses close for the holidays.

What to do: Book well ahead, start early at the famous sights or go in June or September.

Traditions of Strasbourg

  • Late November to late December Christkindelsmärik

Strasbourg’s Christmas market, centuries old, spread over several squares in the centre.

Tarte flambée

Alsace’s Flammekueche: a paper-thin dough with crème fraîche, onion and bacon, baked in a very hot oven. It’s shared in the middle of the table.

  • Serves 4
  • 40 min

Ingredients

  • 250 g flour
  • 150 ml water
  • 2 tablespoons oil
  • 200 g crème fraîche (or sour cream)
  • 100 g fromage frais
  • 1 onion
  • 150 g bacon or pancetta in strips
  • Salt, pepper and nutmeg

How to make it at home

  1. Knead the flour with the water, oil and a pinch of salt until you have a smooth dough. Leave to rest for 30 minutes.
  2. Preheat the oven to maximum with the tray inside.
  3. Mix the crème fraîche with the fromage frais, salt, pepper and nutmeg. Slice the onion into thin rings.
  4. Roll the dough out very thin, spread it with the cream and scatter over the onion and bacon.
  5. Bake for 8–10 minutes, until the edges are golden and crisp.

The trick: The thinner the dough, the better: you should almost be able to see through it.
