Wonton mein

Noodle soup with thin, springy egg noodles and prawn wontons, in a broth of dried fish and shrimp. A classic of the noodle shops of Central and Sheung Wan.

  • Serves 4
  • 1 h

Ingredients

  • 300 g peeled prawns
  • 100 g minced pork
  • 1 tablespoon of soy sauce, 1 of sesame oil and white pepper
  • 24 wonton wrappers
  • 1.5 litres of chicken stock with a little fish sauce
  • 400 g thin egg noodles
  • Chinese chives and Chinese greens

How to make it at home

  1. Chop the prawns into pieces and mix with the pork, soy sauce, sesame oil and pepper.
  2. Put a teaspoon of filling on each wrapper, wet the edges and close them into little purses.
  3. Heat the stock.
  4. Cook the wontons for 3 minutes and the noodles for 30 seconds in separate pans of boiling water.
  5. Put the noodles in bowls, the wontons on top and the boiling stock over, with chives and greens.

The trick: In Hong Kong the noodles go under the wontons so they don’t go soft.

Where and what to eat

To eat like a local: a cha chaan teng (local café) or a dim sum restaurant. The dishes you can’t miss are in the Hong Kong guide.
