Hong Kong milk tea

Strong black tea strained through a cloth “stocking” and mixed with evaporated milk, the drink of Kowloon’s cha chaan tengs. It’s drunk hot or iced.

  • Serves 2
  • 15 min

Ingredients

  • 4 tablespoons of strong black tea (Ceylon or a milk-tea blend)
  • 500 ml water
  • 150 ml evaporated milk
  • Sugar to taste

How to make it at home

  1. Simmer the water with the tea for 5 minutes.
  2. Strain it through a cloth (or fine) strainer into another pan and pour it back and forth between containers several times: it gives it body and smoothness.
  3. Warm the cups.
  4. Pour the evaporated milk into the cups and the tea over the top.
  5. Add sugar to taste.

The trick: Mixed with coffee, it’s called yuenyeung.

Where and what to eat

To eat like a local: a cha chaan teng (local café) or a dim sum restaurant. The dishes you can’t miss are in the Hong Kong guide.
