From 29 April to 5 May half of Japan is on the move: bullet trains packed, hotels expensive and queues everywhere.

What to do: Book reserved shinkansen seats and your hotels as early as possible.

  • June, July

    Rainy season (tsuyu)

From early June to mid-July it rains often and it’s hot and humid.

In August and September a typhoon can stop trains and flights for a day (in October it’s rare).

What to do: Have an indoor plan (museums, covered temples, onsen) for the day it happens.

Traditions of Takayama

Decorated floats and mechanical puppets parade through the old town; it’s one of Japan’s most beautiful festivals.

Mitarashi dango

Skewers of glutinous rice balls grilled over charcoal. In Takayama they’re brushed only with soy sauce (not sweet, as in the rest of Japan) and eaten while strolling through the old town.

  • Serves 4
  • 30 min

Ingredients

  • 200 g glutinous rice flour (mochiko or shiratamako)
  • 170 ml lukewarm water
  • Soy sauce
  • For the sweet version: 2 tablespoons sugar, 1 tablespoon cornflour and 100 ml water

How to make it at home

  1. Mix the flour with the water a little at a time until you have a dough like modelling clay.
  2. Shape balls the size of a walnut.
  3. Cook them in boiling water: when they float, leave them for one more minute and transfer to cold water.
  4. Thread them four to a skewer and grill them on a griddle or barbecue until toasted.
  5. Brush them with soy sauce (Takayama style) or with the sweet sauce thickened with cornflour.

The trick: Brush them and grill them again briefly: the soy sauce caramelises.

Where and what to eat

To eat like a local: an izakaya. The dishes you can’t miss are in the Japan guide.
