Chipa

Rolls of cassava starch, cheese and aniseed, crisp outside and soft inside. Coronel Bogado, near Encarnación, boasts of being the chipa capital.

  • Serves 8
  • 50 min

Ingredients

  • 500 g cassava starch (tapioca flour)
  • 300 g grated semi-cured cheese
  • 100 g butter
  • 3 eggs
  • 100 ml milk
  • 1 teaspoon of aniseed
  • 1 teaspoon salt

How to make it at home

  1. Beat the softened butter with the eggs and salt.
  2. Add the cheese, aniseed and starch, and work in the milk gradually until you have a smooth dough that doesn’t stick.
  3. Shape into rings or small buns the size of a large walnut.
  4. Place them on a tray lined with baking paper.
  5. Bake at 200 °C for about 20 minutes, until golden.

The trick: They’re best fresh from the oven; if they go hard, a few minutes in the oven brings them back.

Where and what to eat

To eat like a local: a Paraguayan comedor or a chipa stall. The dishes you can’t miss are in the Paraguay guide.
