Vorí vorí

A thick chicken broth with vegetables and little balls of cornmeal and cheese: the comforting soup for cold days in Asunción and all over Paraguay.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 4 chicken thighs
  • 1 onion
  • 1 red pepper
  • 1 carrot
  • 1 tomato
  • 250 g cornmeal
  • 150 g grated fresh cheese
  • 1 egg
  • Salt, oil and parsley

How to make it at home

  1. Fry the chopped onion, pepper, carrot and tomato, add the chicken and cover with 2 litres of salted water.
  2. Simmer for 40 minutes and take the chicken off the bone.
  3. Mix the cornmeal with the cheese, the egg and a little hot broth until you have a dough you can shape.
  4. Roll into balls the size of a hazelnut.
  5. Drop them into the boiling broth and cook for 10 minutes, until they float and the broth thickens.

The trick: Serve with more grated cheese on top and chopped parsley.

Where and what to eat

To eat like a local: a Paraguayan comedor or a chipa stall. The dishes you can’t miss are in the Paraguay guide.
