Tereré

The cold mate with herbs that Paraguayans share in a circle at any time of day, essential in the heat of Ciudad del Este and the rest of the country. It’s part of UNESCO’s Intangible Cultural Heritage.

  • Serves 4
  • 10 min

Ingredients

  • Yerba mate
  • 1 litre very cold water (or cold lemon or grapefruit juice)
  • Yuyos: mint, spearmint, lemon verbena or lemon-tree leaves
  • Ice

How to make it at home

  1. Fill a glass or guampa three-quarters full with yerba mate.
  2. Crush the yuyos in a mortar and put them in a jug with the water and ice.
  3. Tilt the glass, pour the cold water in beside the bombilla (metal straw) and drink it all.
  4. Top it up and pass the glass to the next person in the circle, always in the same order.

The trick: Whoever serves drinks first; to say you don’t want any more, just say “gracias” (thank you).

Where and what to eat

To eat like a local: a Paraguayan comedor or a chipa stall. The dishes you can’t miss are in the Paraguay guide.
